Description

A delectable treat combining the tangy sweetness of raspberry preserves with the tropical taste of coconut, layered over a crunchy graham cracker crust, and topped with a duo of melted chocolate and white chips.

Ingredients

Scale
  • 1 2/3 cups graham cracker crumbs
  • 1/2 cup butter (1 stick), melted
  • 2 tbsp sugar
  • 3 cups sweetened, flaked coconut
  • 14 oz sweetened condensed milk (1 can)
  • 1 cup seedless raspberry preserves (or flavor of your choice)
  • 1/2 cup pecans, chopped
  • 1/2 cup semisweet chocolate chips
  • 1/3 cup white baking chips
  • 1 tsp shortening

Instructions

  1. Preheat your oven to 350 degrees.
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar.
  3. Press the mixture into a lightly greased 9×13 baking dish to form the crust.
  4. Evenly sprinkle the flaked coconut over the crust, then drizzle with the sweetened condensed milk.
  5. Bake in the preheated oven for 20-25 minutes, or until the coconut is lightly browned. Allow it to cool completely.
  6. Spread the raspberry preserves over the cooled crust, then sprinkle with chopped pecans.
  7. Melt the semisweet chocolate chips, stirring until smooth, and drizzle over the pecans.
  8. Melt the white baking chips with shortening, stir until smooth, and drizzle over the top.
  9. Let the chocolate set by cooling in the fridge or on the counter, then cut into bars.

Notes

The key to perfect Raspberry Coconut Magic Bars is in the layering. Start with a firm base by pressing the graham cracker mixture evenly into your baking dish. Each layer should be added with care to ensure even distribution. When melting the chocolate and white chips, use a double boiler or microwave in short bursts, stirring frequently to prevent burning. The smooth drizzle of chocolate and white chips adds a final touch of decadence.
