    • 1/2 to 3/4 cup chicken broth
    • 2 tbsp oyster sauce
    • 2 tsp dark soy sauce
    • 3 cloves minced garlic
    • 12 tsp minced ginger
    • White pepper, to taste
    • A drizzle of sesame oil
  • For the Slurry:
    • Equal parts water and starch

Instructions

  1. Marinate the Chicken: Combine the chicken slices with soy sauce, rice wine, egg white, and cornstarch in a bowl. Mix well and refrigerate for 30 minutes.
  2. Prepare the Sauce: In a separate bowl, whisk together the chicken broth, oyster sauce, dark soy sauce, minced garlic, minced ginger, and a dash of white pepper. Finish with a drizzle of sesame oil.
  3. Blanch the Vegetables: Bring a pot of water to a boil. Add the broccoli florets and carrot slices, blanching for about 2 minutes. Remove and set aside.
  4. Cook the Chicken: In the same boiling water, add the marinated chicken and blanch for about 2 minutes. Remove and drain.
  5. Combine and Cook: Heat a clean wok or skillet, add the prepared sauce, and bring to a simmer for one minute. Add the chicken, blanched broccoli, and carrots. Stir in the slurry to thicken the sauce, ensuring all ingredients are well coated.
  6. Serve: Once the sauce has thickened and the chicken and vegetables are well coated, remove from heat. Serve your delicious Chinese Chicken & Broccoli hot, ideally over a bed of steaming rice.
