- 1 1/2 tbsp cornstarch

- Water, for blanching
- For the Sauce:
- 1/2 to 3/4 cup chicken broth
- 2 tbsp oyster sauce
- 2 tsp dark soy sauce
- 3 cloves minced garlic
- 1–2 tsp minced ginger
- White pepper, to taste
- A drizzle of sesame oil
- For the Slurry:
- Equal parts water and starch
Instructions
- Marinate the Chicken: Combine the chicken slices with soy sauce, rice wine, egg white, and cornstarch in a bowl. Mix well and refrigerate for 30 minutes.
- Prepare the Sauce: In a separate bowl, whisk together the chicken broth, oyster sauce, dark soy sauce, minced garlic, minced ginger, and a dash of white pepper. Finish with a drizzle of sesame oil.
- Blanch the Vegetables: Bring a pot of water to a boil. Add the broccoli florets and carrot slices, blanching for about 2 minutes. Remove and set aside.
- Cook the Chicken: In the same boiling water, add the marinated chicken and blanch for about 2 minutes. Remove and drain.
- Combine and Cook: Heat a clean wok or skillet, add the prepared sauce, and bring to a simmer for one minute. Add the chicken, blanched broccoli, and carrots. Stir in the slurry to thicken the sauce, ensuring all ingredients are well coated.
